Homemade Tonic Syrup

- 6 g Powdered cinchona bark
- 150 g Vodka
Aromatics
- 2 g Cinnamon
- 15 g Lemon juice or citric acid
- 1 g Nutmeg ( ground )
- 20 g Lemon peel
- 10 g Orange peel
- 20 g Grapefruit peel
- 1 g Cardamon seeds
- 1 g Sumac
- 400 g Sugar
- 500 g Water
Instructions
- Dissolve the cinchona bark in the vodka and strain using a coffee filter. This can take an hour. For the aromatics, mix them all in a pot and let it boil. When it’sboiled, reduce the heat and let it simmer for like 20-30 mins. Strain it and let it cool
- Take 35 ml of the quinine mix (cinchona bark and vodka mix) and stir with the aromatic syrup. Seal tightly.
Notes
It can stay in the refrigerator up to 2 weeks. This syrup first appears in the ‘Bar Book’ by Jeffrey Morganthaler and very useful in the cocktail making. You can add as much as you want in your drink to flavour your drink. Cinchona bark is actually a medical plant and it is used in the production of quinine. Quinine is the matter that used in tonic which gives it the bitter taste.
